[285] Middle of the Week…end

285

Besides the whole work part of Wednesday, it kind of feels like a weekend to me. Tuesdays are such a long day for me so Wednesdays I like to just go home after work, clean the kitchen and put the massive pile of clothes on my floor away, turn on the fireplace, write my blog post, eat dinner, whatever it may be, with a glass of wine, catch up on my shows, and put a beauty mask on my face while I pin shit I’ll probably never have or ever do. I love it, and wouldn’t have it any other way.

[250] Wednesday, You Suck Too.

250

I woke up sweating my balls off, which is not normal for me, thank goodness, so I took my temperature and it was 100.2. Since I was definitely not going into work I turned my heated mattress pad off, and went back to sleep. I’ve been sitting in bed literally all day catching up on my stories, pinning things, sleeping, eating things, drinking lots of tea, and just generally resting up. Even though it sucks to be sick, I do feel better, and apparently needed the rest.

[234] Letters from Rita

234

Today was a weird day, so I was beyond ecstatic when I got home after a late meeting to find a lovely letter from my friend Stephanie. She lives in Boston with her hubby and works as a lifestyle/wedding/baby/family photographer. And boy is she amazing. (You should check out her website not just because I’m telling you to, but also because it’s totally worth your time.) She’s also amazing at hand lettering everything. She calls them doodles, but they are way more than that. (You should also check out her Etsy shop not just because I’m telling you to, but also because you might find something you’d like to hang up on your wall.)

As digital as our lives are, it’s always heartwarming and smile inducing when you get a handwritten letter from someone you love. Thanks for the pick-me-up, Steph.

P.S. Here are some other places you can find Stephanie (not me…I’d never refer to myself in the third person) online: Facebook, Pinterest, and Twitter. I’m sure you’ll love her as much as I do.

P.P.S. Me and you Steph, secret Pinterest board…stat.

[211] Convoluted List Making

211

I’m gonna be honest…I had this ready to go up last night, but I fell asleep on the couch watching The Great Food Truck Race on my new TV, and by the time I woke up, it was after midnight and getting on my computer to post just wasn’t going to happen. So instead of just one post, you get two today! Yay!

I finally went grocery shopping today. I got home from vacation a week ago and somehow survived with what I had in the fridge, freezer, and pantry. It wasn’t pretty, but I did it.

Because I’m weird, I guess, it takes me almost an hour to write up my shopping lists. I start by standing in front of the fridge to see what I have so I can make a list of the basics I need; the things I use on a daily basis. Then I go into my Pinterest and look through my food boards to decide on recipes that I’d like to make over the next week or two. Once I have my recipes picked (this week I picked Chickpea Curry with Coconut Rice, Sweet Potato Gnocchi with Sage Brown Butter, Lime Shrimp and Avocado Salad, and Quinoa Salad with Asparagus, Peas, Avocado and Lemon Basil Dressing,) I make mini lists for each of the recipes; it helps me organize everything. After separating my grocery list by recipe I combine the list of basics with recipe specific items, and I organize it by type of food item i.e. produce, dairy, frozen, pre-packaged, etc and try to put them in order of what I’ll hit at the store.

It’s kind of a convoluted way of making a grocery list, but I’m a planner, and like having a plan when I go food shopping. I don’t really enjoy spending hours in a grocery store, unless it’s Wegmans, so getting in and out in under 45min is ideal.

After I unpacked my groceries I immediately made Chickpea Curry with Coconut Rice. In all seriousness, coconut oil is my new favorite thing. This rice has an intoxicating coconut aroma that makes me want to gobble up every tiny piece of jasmine rice right now. AND I could easily eat it every single day for the rest of my life. Yeah, it’s that good.
